Quick chimichurri

Aka quick chims

The Ingredients:

  • Half of an onion
  • Handful of parsley
  • Handful of cilantro
  • couple teaspoons (or a Tablespoon if you’re adventurous) of minced garlic
  • salt and pepper to taste
  • extra virgin olive oil
  • a quarter or half packet of splenda/sugar free sweetener
  • splash of white vinegar

The method:

Roughly chop the onion and add everything except the olive oil into a food processor, then start pouring olive oil while you pulse the ingredients until desired consistency. Then taste and add stuff as needed. I love topping a good protein with this, it feels fancy.
