Eggplant lasagna in the slow cooker!

The Ingredients:

  • Eggplant
  • Marinara sauce
  • Mozzarella cheese
  • Parmesan cheese
  • Ground beef
  • 1.5 onions (vidalia)
  • 4 cloves garlic
  • Cottage cheese
  • Salt
  • Onion powder
  • Garlic powder
  • Crushed red pepper flakes

The Method:

  • Slice eggplant, season both sides and air fry for 20ish minutes to get excess moisture out
  • Dice onion and garlic
  • Brown meat on medium-high heat (with the seasonings) and add onions and garlic
  • Drain excess fat
  • Layer eggplant, then meat, then sauce, then cheese (also cottage)
  • REPEAT UNTIL SATISFIED
  • Cook on low for 2-3ish hours or until bubbly and melted

This is more low carb than keto because of the sugar in the sauce, but you know your body best, do what works for you!
