The Ingredients:
- Jumbo scallops
- Salt
- Pepper
- Butter
- Bacon grease
The Method:
- Heat cast iron to medium high heat
- Wash and pat dry scallops
- Add a little bacon grease
- Season scallops with salt and pepper
- Sear scallops, cook 4-5ish minutes per side
- Add butter and flip, cook until opaqueness is gone from middle (3-4 minutes)
- Consume
Very simple, very fast, very yum, the butter adds a nice charring effect. These were on the high side of my budget so I made sure to not overcook them. I feel I cooked them perfectly, they had chew but not overly and were very sweet. I posted a pic on my Instagram for reference.
