Keto fried chicken

The ingredients:

  • Skin on chicken thighs, deboned, cut into chunks.
  • Oyster sauce (for marinade, very carby so use sparingly).
  • Soy sauce (for marinade).
  • 2 cups Carbquik (seasoned with salt, pepper, and blackened seasoning)
  • Bunch of canola oil (for deep frying)
  • 1 tablespoon xanthan gum (mixed in seasoned Carbquik)

The cook:

Heat cast iron to medium high heat, added canola oil, coated chicken went in for about 5-7 minutes per side until juices run clear.

The skin gives this really satisfying crunch and it’s so salty and just delicious. Highly recommend this quick fry as it’s ketovore friendly and I was hungry for fried chicken.
