Midday bacon cheeseburgers

Another lunch post, another quickie meal.

For the burgs:

73/27 meat

1/2 teaspoon salt

black pepper to taste

1/8 teaspoon garlic powder

1/8 teaspoon onion powder

couple dashes of liquid smoke

couple dashes of bagel seasoning – because it sits in my cupboard, unused

I formed into palm sized balls and placed on high heat grill with 4 slices of bacon on the top rack. With the high fat content I didn’t leave the grill unattended as I kept an eye on the proteins. About 4-5 minutes per side and I smashed them down to about 1 inch thickness. A little more salt was added to just coat lightly, wonderful.

Got these keto buns here from Aldi, which are perfect for my burgers. I added some mayo, spicy mustard, fresh sliced white onion, a tiny amount of ketchup (because sugar content is high), american cheese slice, and the bacon I roughly tore up and placed on it. Beautiful and extremely fatty, so much so that I will likely change the recipe to a leaner beef mixture. This is also why I added the mustard, because this benefits from that acidic mustard. Oh, I also added some diced canned jalapenos for a little more of that acid to balance out the fatty burger.
