- Boneless, skinless chicken thighs

- spicy seasoning mix/cayenne
- garlic powder
- onion powder
There’s really nothing to this meal, but I used roughly 2-3 big pinches of salt on each side, with a bunch of black pepper, a few shakes of spicy seasoning mix, and probably 1/8 teaspoon of garlic and onion powders on each chicken thigh, then rubbed it all in, grilled on medium high heat for roughly 7-10 minutes each side until juices run clear. Luckily for chicken thighs, they stay moist through 165 degrees, I didn’t temp these but they were still juicy and not overcooked, I should’ve pulled them a minute before if I did it again. I put big chunks on a low carb tortilla, with some canned green beans, swiss cheese, sour cream, Valentina hot sauce, and salsa verde and enjoyed immensely, my favorite part of the bird.
